_Testing the new Recipe Block

In the July 2021 issue of Mayo Clinic Health Letter, the article titled “Healthy Cooking Oils” provided an overview of various cooking oil qualities. The recipes below help bring that advice into action. If you have peanut, sesame, grapeseed or olive oil on hand, you can create these delicious dishes.

Vegetables Soup

Prep Time: 15 mins
Cook Time: 10 mins

Ingredients

  • Veggies
  • Mayo

Directions

  1. Chop vegetables into uniform pieces.
  2. Sauté onions or leeks in a teaspoon of oil or butter.
  3. Add carrots.
  4. Add celery.
  5. Add bell peppers.
  6. Add garlic.
  7. Add stock or water and bring to a boil.
  8. Add root veggies, like winter squash or potatoes.
  9. Season with fresh or dried herbs (like thyme, rosemary and bay leaves).
  10. Simmer 15 to 45 minutes, until vegetables are soft.
  11. For a creamy soup, puree half or all now. For a broth-based soup, add canned beans, quick-cooking whole grains or cooked chicken now.
  12. Stir in greens, like escarole, kale or spinach.
  13. Season with salt and pepper.

Pisco Sour Recipe

Prep Time: 15 mins
Cook Time: 10 mins

Ingredients

  • 2 oz of pisco
  • 1 oz of simple syrup
  • ¾ oz lime juice
  • One egg white
  • 2-3 dashes of aromatic bitters

Directions

  1. Combine all ingredients —except the bitters—into a cocktail shaker and shake. 
  2. Add ice and shake again. 
  3. Pour into a glass and serve. 
  4. Use the dashes of aromatic bitters for garnish.

Mint Julep Traditional Spirited

Prep Time: 15 mins
Cook Time: 10 mins
Servings: 2
Yields: 3 cups

Ingredients

  • 1½ oz Bourbon
  • ¼ oz Simple syrup
  • 8-10 Mint leaves
  • 2 drops bitters
  • Mint sprig garnish

Directions

  1. Add mint leaves and simple syrup directly to cup then muddle.
  2. Fill cup halfway with pebble ice and pour over bourbon.
  3. Stir gently until ingredients are combined and add more ice.
  4. Add two drops of bitters, garnish with mint sprig and enjoy.

This is prep for seven persons
